Enough olive oil to swirl in bottom of frying pan – 4-5 tablespoons
2 teaspoons cayenne
2 teaspoons black pepper
1-teaspoon garlic salt
1-pound fresh sea scallops cut into wedges, chunks or slices if large

5-6 garlic cloves smashed and chopped to toss with pasta
Chopped fresh parsley – small handful
Olive oil to add to pasta
Salt and pepper to taste
Bowtie or small shell pasta cooked al dente

Rinse sea scallops and pat dry
Mix together, cayenne, black pepper and garlic salt. Gently roll scallops in spices. Heat a non-stick frying pan, or well-seasoned cast iron pan, until very hot. Pour in oil and heat until just begins to smoke. Carefully place each scallop in pan and sear on both sides until just cooked and juices have been released. Do not cook in more than one layer. If need to repeat with second batch of scallops.

Prior to this cook bowtie or shell pasta till firm – not mushy.
When cooked toss with chopped garlic, parsley and some small amount of olive oil.

When scallops are done add to warm pasta and toss with pan juices. Sprinkle with salt and pepper and more parsley serve hot or cold.
