5 ears corn, shucked
½ c. small diced red onion (1 small onion)
3 T. cider vinegar
3 T. olive oil
½ tsp. salt
½ tsp. pepper
½ cup cut basil leaves

Cook corn for 3 minutes in boiling water, on the cob.
Drain and immerse in ice water, to stop cooking.
When cool, cut kernels off the cob.

Toss kernels in a large bowl with red onions, vinegar, olive oil, salt and pepper.
Add basil, freshly cut, right before serving.
