2 ½ cups flour
1 ½ cups sugar
3 T unsweetened cocoa powder
1 tsp baking soda
2 eggs
1 ⅓ cups vegetable oil
¾ cup buttermilk (at room temperature)
1 T white distilled vinegar
2 T red food coloring
½ T vanilla extract

Makes 24 regular cupcakes or 2 9" pans.

Preheat over to 350º. Line cupcake pan or grease cake pans.

In a medium bowl, mix together the flour, sugar, baking soda, and cocoa powder.

In a large bowl, mix together eggs and oil.

In medium bowl, mix together buttermilk, food coloring, vinegar, and vanilla extract.

Gradually add flour + buttermilk mixtures to the egg mixture beginning and ending with dry ingredients (order: flour, buttermilk, flour, buttermilk, flour).

For mini cupcakes, bake 13-14 minutes. For cake, bake 25 minutes. For regular cupcakes, bake 22 minutes. Use toothpick to check if done. Once cooled, frost!
