1 1/2 cups milk
1/2 tsp. salt
1/4 cream of rice
2 tblsps. butter
1/2 cup grated cheddar cheese
3 eggs, separated
Grated Parmesan Cheese

Directions:
Directions:
Combine milk and salt. Scald. Sprinkle in rice and cook, stirring constantly, for 1 minute. Remove from heat, cover and let stand for 4 minutes. Add butter and cheese; stir until blended. Beat egg whites till fluffy, but not dry. Beat egg yolks till lemon color. Gradually add rice mixture into egg yolks. Fold in 1/3 of beaten egg whites, then remainder. Pour into unbuttered 1 1/2 quart baking dish. Sprinkle top lightly with Parmesan Cheese. Bake at 325º until puffy and golden brown (about 40 minutes). Serve immediately!
