2 T. butter
1 T. olive oil
1 small shallot, minced
1 lbs. small white mushrooms, halved
salt & pepper
1 tsp. minced fresh thyme
1/4 c. red or white wine

Directions:
Directions:
Melt butter with oil and add shallots over medium - low heat. 5 minutes

Add mushrooms, salt and pepper to shallots. Cook over medium heat 5 - 6 minutes covered.

Uncover, raise heat to high, cook 3 - 5 minutes.

Add thyme and wine; cook until skillet is almost dry, 1 minute.
