2 lbs ground lean pork
1/4 tsp salt
1/6 tsp pepper
1/2 Chinese cabbage (nappa), celery cabbage, regular, chopped finely
1 1/2 cups fresh bean sprouts, cut two or three times
1 tsp cornstarch
5 green onions, diced
1/4 cup soy sauce
1 each egg, well beaten
1/2 tsp sesame oil
3/4 gallon pork bone stock or chicken bone stock

Directions:

Mix ingredients for filling. Place 1 tsp filling in center of each square wonton skin, fold corner to corner to make a triangle, pinch together the widest 2 outer corners so that the filled wonton folds up to resemble a child's paper hat.

Drop won-ton into deep pot of boiling stock. cover with lid and cook several seconds over high heat when stock boils again. Turn off the fire. Simmer 3-4 minutes to serve.

Won-tons may be deep-fried also and served with sweet and sour sauce.
