Large stock pot or sauce pan with cover, Potato masher

Ingredients:

8-10 medium russet potatoes (about 3 lb.)
1 teaspoon salt
2 tablespoons butter, if desired
Dash of black pepper
1/4 cup hot milk

Directions:
Step 1: Peel your potatoes and chop them into quarters.
Step 2: Place peeled, chopped potatoes in a large saucepan, adding enough water to cover. Add 3/4 teaspoon salt, an bring to a boil.
Step 3: Reduce heat to medium-low, cover loosely and boil gently for 15-20 minutes, or until potatoes are tender enough to be poked through with no resistance.
Step 4: Drain well and return potatoes to saucepan. Shake saucepan gently over low heat for 1-2 minutes to evaporate any excess moisture. (Tip: If you're tempted to skip this step, don't! It's the key to fluffier mashed potatoes.)
Step 5: Mash potatoes with potato masher until no lumps remain. Add butter, pepper and remaining 1/4 teaspoon salt. Continue mashing your potatoes, gradually adding enough warmed milk to make potatoes smooth and creamy.

(Tip: Warming milk in the microwave is easiest, and should only take 15-30 seconds depending on your microwave. It's important to use warm milk so that the cold milk doesn't cool down the potatoes.)
