8 chicken breasts halves, skinned and boned
1 (7 oz.) can diced mild green chiles
6 oz. Monterey Jack cheese cut in 8 strips
1/2 cup fine dry bread crumbs
1/4 cup grated Parmesan cheese
1 tbsp. chili powder
1/2 tsp salt
1/4 tsp ground cumin
6 ozs melted butter

Directions:

Pound chicken pieces to about 1/4" thickness. Put 2 tbsp. chiles and 1 strip Jack cheese in center of each piece. Roll up and tuck end under.
Combine bread crumbs, Parmesan cheese, chili powder, salt, cumin & pepper in a bowl. In a separate bowl dip each stuffed chicken breast in the bowl containing melted butter. Roll chicken in crumb mixture.
Place chicken seam side down in oblong baking dish and drizzle with left over butter. Cover and chill for 4 hours. (If unable to chill, the chicken is still great).
Bake uncovered at 400º for 20 minutes.
