½ - ¾ Cup Olive Oil

7 oz. Paneer Cheese, cubed

3 Tomatoes, diced

1 Tsp Ground Cumin

1 ½ Tsp Ground Chili Powder

1 Tsp Salt

14 oz. Fresh Spinach Leaves

3 Fresh Green Chilies

Directions:
Heat oil in a large skillet; add paneer and cook on medium-high heat, stirring occasionally, until golden brown. Add tomatoes and stir-fry for 5 minutes, breaking up tomatoes. Add cumin, chili powder, and salt; mix well. Add spinach, stir-fry over low heat for 7-10 minutes, or until spinach is wilted. Add chilies and cook, stirring, for an additional 2 minutes.

This recipe is from my Indian cook book, I don’t know why they call it “Spinach & Cheese Curry”, even though there’s no curry in it. But it’s delicious anyway!
