1/4 cup Thai sweet chili sauce
1/4 cup hoisin sauce
1/4 cup soy sauce
3 Tbsp. Sriracha
3 Tbsp. vegetable oil
1-1/2 tsp. sesame oil
2 Tbsp. unseasoned rice vinegar
3 Tbsp. minced garlic

Filling
1 lb. ground turkey
3 Tbsp. vegetable oil
1 Tbsp. minced garlic (about 2 cloves)
½ cup finely diced canned water chestnuts
2 small sweet peppers, finely chopped
butter lettuce, leaves separated or tortillas

Make the sauce: In a bowl, combine the chili sauce, hoisin, soy sauce, Sriracha, vegetable oil, sesame oil, vinegar, garlic, and ginger.
In a bowl, mix 2 Tbsp. of the sauce into the ground turkey.
In a large skillet, heat 2 Tbsp. of the vegetable oil over medium-high heat. Add turkey and brown. Add garlic, water chestnuts and peppers. Cook for 1 or 2 minutes.
Add the rest of the sauce and cook, stirring, until cooked through and the liquid has reduced and thickened slightly, 3 to 4 minutes.
Serve mixture in the lettuce leaves or spoon a few tablespoons down the center of a tortilla and roll up.
