4 beef cutlets (about 1 pound)
spinach
Salt and pepper to taste
Pan Searing Flour
2 tbsp. EVOO
2 cloves sliced garlic
1 28 oz. can Crushed Tomatoes with Italian Style Herbs
1/2 tsp. dried oregano
1/4 cup grated Parmigiano Reggiano cheese

Directions:
Directions:
Lay out the beef cutlets on a flat surface.
Top each cutlet with spinach and grated cheese.
Starting at one end, tightly roll the beef cutlets so that the spinach and cheese are inside (like a pinwheel). Tie the cutlets closed with two pieces of string (one on each end).
Roll each cutlet in the pan searing flour.

Heat the EVOO in a pan on Medium-High until oil faintly smokes.
Add the beef cutlets and cook, turning to brown on all sides, about 5 minutes,
Remove from pan.

Add garlic to pan; cook, stirring for 1 minute.
Add tomatoes and oregano; stir to combine.
Return the beef cutlets to the pan and bring to simmer.
Lower heat to Medium, cover and simmer about 40 minutes or until beef is tender.

Remove from pan.
Cut and discard the strings.
Serve with pan sauce and sprinkle with cheese.


Note: to make you own pan searing flour you'll need:

2 cup flour
1 tbsp. course salt (Kosher Salt or Sea Salt)
1 tsp. white pepper.

Mix ingredient well.
