2 large potatoes
1 medium onion
1 small carrot
1 small celery stalk
2 1/2 cups chicken broth
1 1/2 cups milk
Salt and Pepper to taste

Directions:
Directions:
Cut potato, onion, carrot and celery into 1 inch pieces. Place in a 2 quart microwave safe dish, add broth. Cover and cook on high 15 minutes or until vegetables are tender. Puree soup in blender or food processor. Return to casserole dish and stir in milk. Cook on high, uncovered 4 to 5 minutes or until hot.
Season with salt and pepper to taste.

I especially loved this soup and the hands that made it, due to those loving hands prepared it when I was sick and at my worst and somehow it made me feel all better. I almost looked forward to my next sick spell just so she'd prepare this get well dish...such great memories! Oh, how I miss those hands :(
