1 - 3 heaping table spoons hummus
1 tbsp. lemon juice or squeeze of half of a lemon
1 tbsp. Worcestershire
1 - cloves crushed garlic
EVOO
1 - torn-up heads of Romaine lettuce
Salt
Pepper
Grated Parmesan
2 sweet potatoes, cubed
2 tbsp. olive oil
Sea Salt, to taste

Directions:
Directions:
In a large salad bowl, mix the hummus, lemon juice, Worcestershire and crushed garlic.
Take your EVOO bottle and pour it around the bowl three times.
Add the Romaine lettuce.
Season with salt and pepper.
Top with grated Parmesan.

Preheat the oven to 450º.
Sprinkle Sea Salt over the cubed sweet potatoes.
Roast the cubed sweet potatoes on a parchment lined baking sheet for 25 minutes.
Toss sweet potatoes with the salad and serve immediately.
