1 lb of large shrimp, peeled and deveined, shells and tail removed.
12 oz sliced prosciutto
1 Tbls olive oil
12 oz fresh fettuccine pasta
1/4 cup dry white wine ( or chicken stock or shrimp stock)
4 oz log of goat cheese
Salt and pepper to taste
3 scallions, finely chopped

Heat oven to 200 ºF. Bring a large pot of salted water to a boil, for the pasta.
Tightly wrap each shrimp in a slice of prosciutto
In large skillet over medium high heat, heat the olive oil. Add shrimp and cook for 2-3 minutes on each side, or until the prosciutto is browned and crisp and shrimp are pink and cooked through.
Transfer the shrimp to an oven safe plate and place in oven to keep warm.
Reserve skillet, do not clean it.
Add the pasta to water and cook according to package, drain and set aside.
Return skillet to stove over medium high heat, add the white wine or stock and heat for 30 seconds, scraping up any bits from bottom. Whisk in goat cheese and let soften and melt, then add pasta and toss until well coated.season with salt and pepper. You can add 1/4 cup of pasta water if needed.
Divide pasta between serving plates, top with prosciutto wrapped shrimp, about 6-8 shrimp per plate. Then top with chopped scallions.
