Ingredients:  
2 lbs. breakfast sausage, links or bulk, cooked, drained, chop into small pieces if
using links.
9 eggs
1 1/2 cups milk
1 1/2 cups half and half
1 1/2 tsp. ground mustard
Salt & Pepper to taste
40 oz. thawed shredded hash browns (make sure to squeeze dry)
2 -3 cups shredded cheese
1 onion, chopped
1/2 or whole orange, red or yellow pepper
Combine everything, mix well

Pour into a large greased 13 x 9 baking dish
*or you can divide into 2 smaller batches
Cover and refrigerate overnight

Take out 30 minutes to 1 hour before baking
Bake uncovered 350º for 60-70 minutes until brown and set

Let stand 15 minutes before serving
