1 Eggplant
3/4 C. Fine Bread Crumbs
1 Egg
Salt and Pepper to taste
1 tbsp. Water
Vegetable Oil
1/2 C. Flour

Directions:
Directions:
Peel eggplant in 1/2" thick slices. Then cut in the width of two fingers. Sprinkle with salt and pepper.

Combine egg and water, beat real good. Dredge in flour, then dip in egg mixture. Roll in bread crumbs.

Fry in hot oil about a 1/2" or more in deep oil until golden brown; drain on paper towel.
