1 Large Baking potato cut into 8ths
1 Large Garlic Clove (lightly smashed)
5 Cups Vegetable stock
3 Cups Kale (rinse well & chop roughly)
1 Tsp Fresh Marjoram or oregano leaves
1 Bay leaf
Salt & Freshly ground pepper to taste

Directions:
Directions:
Combine potato, garlic & 2 cups of vegetable stock in a stock pot and heat over medium heat and cook for 15 minutes or until the potatoes get soft. Puree potato stock.

Combine kale, bay leaf and remaining 3 cups of vegetable stock and cook for about 10 minutes.

Stir potato puree with kale stock and simmer until hot.
