2tbsp Extra Virgin Olive Oil
1tbsp Balsamic Vinegar
3 Cloves of Garlic, Crushed
6 Cups of Hot Penne Pasta cooked Al Dente
2 Cups Chopped Fresh Spinach or Baby Spinach
¼ Cup Chopped, Pitted Kalamata Olives
2tbsp Large Size Capers
¾ Cup Crumbled Feta Cheese

1. Combine first 3 ingredients in a large bowl
2. Add pasta, spinach, olives, capers and cheese
3. Toss well & Serve Immediately
The key to the success of this recipe is that the pasta is steaming hot so that when added to the other ingredients it wilts the spinach and slightly melts the cheese making a creamy sauce. Looks beautiful and tastes Delicious!
