1 lb. sausage (I like Jimmy Dean)
4 (16-oz.)cans pinto beans (drained and rinsed)
1 can (14.5 oz.) diced tomatoes with zesty green chilies, drained
1/2 tsp. salt
1/2 cup chopped red onion
1/2 cup chopped green pepper
1 (8-oz.) pkg. shredded Mexican four-cheese blend
1 cup buttermilk
1 cup self-rising white cornmeal mix

Directions:
Directions:
Preheat oven to 425º. Brown sausage in a large skillet over medium heat, stirring often, until sausage crumbles is no longer pink. Add onion and pepper, saute 3 minutes or until vegetables are tender, Stir in beans, tomatoes and salt. Pour sausage mixture into a slightly greased 13x9 inch baking dish. Sprinkle with 1 1/2 cups cheese. Stir together milk and cornmeal mix. Spoon over cheese and sausage mixture. Sprinkle with remaining 1/2 cup cheese. Bake for 25-30 minutes or until browned.
