Ingredients: 2 1/2 C. Zucchini noodles (or 2 medium size zucchinis) 1 small onion sliced thinly 1 tsp sugar (optional) 1 tsp fresh thyme, chopped (plush more for garnish) 2 tbsp. unsalted butter ( or Olive Oil for healthier choice) 1/4 C beef broth 2 tsps. Worcestershire sauce 1 C Fontina Cheese, grated ( or parmesan cheese) salt and pepper Directions: Preheat oven to 400 degrees in a skillet melt butter of oil, on medium heat, place onion into skillet and cook a couple of minutes. add salt and pepper (sugar) Worcestershire sauce and thyme. Stir and cook a couple of minutes. Add beef broth and cook until onions are golden brown...(about 10 minutes) stir occasionally to keep from burning. Rub in an 5 X 8 baking dish ..or what you have close to that size...olive oil. in large bowl combine zucchini noodles (or slices if you don't want to spiralize them) and the French onion mixture. Pour into the baking dish and top with the cheese. place in oven and bake for 20 to 25 minutes or until golden brown. Remove from oven and cool slightly before serving. garnish with the thyme if desired ( there will probably be liquid from zucchini...if so just drain it off carefully with a spoon before serving. ........serves 4
