Oatmeal Cookies
1/2 cup oil
1/2 cup shortening
1 cup brown sugar
1 cup sugar
2 eggs
1 tsp. vanilla
1 1/2 cup plain flour
1 tsp salt
1 tsp soda
3 scant cups (2 2/3 cp) Quaker old fashioned oatmeal
( you can add 1/2 cup nuts or raisins or both)

Cream the oil, shortening and sugars by hand. Add eggs and vanilla and cream thoroughly by hand. Add other ingredients. Drop by teaspoonful onto cookie sheet sprayed lightly with Pam. Bake 350 for 9-10 minutes, for chewy cookies, remove from oven as soon as they begin to brown and drop the pan onto the counter (cookies will fall) and then remove to paper towels to cool. Makes about 4 dozen cookies.

When I was in school Mother and Gwen Burgess carpooled us and her 2 daughters and in the afternoon when we'd take Dianne and Glenda to their house, Mrs. Burgess would have these cookies for us! Such a treat! We'd eat cookies and play while they had coffee. She gave me this recipe when I married, she also had my bridal tea... I've made them all these years and my grands LOVE THEM:)
