Peanut Squares Recipe

Alicia Capece-Joos


1/2 c shortening
1 c milk
2 tsp baking powder
3 egg whites, stiffly beaten
1 c sugar
2 c flour
dash of salt

Frosting - make twice the recipe
1/2 c butter
2 c powdered sugar
3 egg yolks
unsalted peanuts, crushed finely

Cream shortening and sugar. Add alternately sifted dry ingredients and milk. Fold in stiffly beaten egg whites. Bake in 11"x9" pan, greased at 350 until toothpick comes out clean. Cool. Cut in small squares.
Prepare frosting in double boiler. Cover and cook about 15 minutes. Keep hot while dipping cake in frosting.
Roll in crushed peanuts.
