4 garlic cloves
2 1/2 tsp fennel seeds, crushed
1 1/4 tsp salt
2 tsp. olive oil
1 pork roast, bone in or without ( approx. 4 lbs)

Preheat oven to 450. In cup, combine garlic, fennel,salt, and oil to make paste. Place roast in small roasting pan and rub fennel paste on outside of pork. Roast 45 minutes, then turn oven to 350, cover meat loosely with tent of foil, and roast until internal temp is 155 degrees, about 45 minutes longer. Temperature will rise to 160 degrees upon standing. When roast is done, transfer to warm platter and let stand 15 minutes. Makes 8 main dish servings.

Crock pot Directions:

Place roast in crockpot and rub paste all over the pork. Cook on high for 1 hour, then turn to low and cook for 6 to 7 more hours until temperature reaches 170.
