Mike's Cincinnati Chili Recipe

2 lbs. ground chuck
2 yellow onions, chopped
6 garlic cloves
3 jalapeno peppers
3 serrano peppers
1 or 2 habanero peppers
1 can kidney beans, rinsed
1 can black beans, rinsed
2 cans diced tomatoes
cup vinegar
2 T. Worcestershire Sauce
1 bottle dark beer
⅛ cup baking cocoa
2 T. chili powder
3 tsp. ground cinnamon
2 T. dried oregano
1 T. ground cumin
1 tsp. ground allspice
1 T. paprika
1 tsp. chipotle pepper powder
1 T. Franks Red Hot Sauce
3 bay leaves
tsp. sugar
salt and pepper to taste
shredded cheddar cheese
sour cream
chopped green onions

In a big pot, cook beef in beer, stirring frequently to break down ground beef. Add chopped onions, garlic, jalapenos, serranos, and habaneros to beef while cooking. Add beans, tomatoes, vinegar, cocoa, and all other dry ingredients and seasonings; bring to a boil. Reduce heat and add beans; cover and simmer for 1 - 2 hours. Discard bay leaves, and serve. Garnish with cheese, sour cream, and green onions. Serve with tortilla chips or oyster crackers.

This dish will warm you up on a cold day. It is a nice balance between regular chili and Cincinnati chili.
