1 Ripe tomato , finally chopped
2 tbsp. finely minced white onion
2 Serrano chillies, seeds removed, finely chopped
1 tbsp. fresh lime juice
1/2 tsp. sea salt
4 Avocados, preferably Hass
2 tbsp. finely minced fresh cilantro

For The Garnish

1 tbs. cilantro
1 tbsp. finely chopped white onion
1 tbs. finely chopped ripe tomato

Directions:
Directions:
Put the tomato, onion, chillies, limejuice and the 11/2 tsp. salt in a food chopper and pulse to a course paste. Cut the avocados in half, remove the pits and scoop the flesh into tomato mixture. Add the minced cilantro and mix and mash, leaving some lumps. Taste and adjust the seasoning with salt

Garnish , and serve immediately
to keep at room temperature for up to 1 hour, cover with plastic wrap, pressing it directly onto the surface.
