2 T olive oil
1-1/2 cup chopped onion
3/4 cup chopped carrots
3/4 cup chopped celery
1 minced garlic cloves
1 meaty ham bone, or a meaty ham shank
6 cups chicken broth
2 Bay leaves
2 sprigs thyme
2 lbs russet potatoes, peeled, and cut into 3/4 inch cubes
1-1/2 cup cubed ham
1/2 tsp ground pepper
1/4 cup whipping cream
Salt to taste

Directions:
1. Hest oil in a large pot or Dutch oven on medium high heat. Add onions, carrots, celery, and saute for 7 or 8 minutes. Add garlic and cook for a minute more.
2. Add ham bone. Add stock and bay leaves and thyme. Bring to a boil, lower the heat to maintain a simmer. Cover and simmer for 45 minutes.
3. Add potatoes and simmer for 15 more minutes. Remove the ham bone or shank. Puree half the soup so some of the potatoes get pureed to give the soup body, but there are still some chunks for texture.
4. Return any meat cut off bone or shank and add extra ham if desired.
5. Stir in the cream and add pepper and salt to taste.
