6 large zucchini
6 large squash
4 large purple onions
4 spanish onions
5 red peppers
4 green peppers
4 yellow peppers
3 lb baby carrots blanched
4 Tbs salt
1 Tbs black pepper
4 Tbs basil
1 c oil (olive)
Cube and combine spread in single layer on 3 baking sheets
Bake 450 for 45 min
