1 pkg (4 serving size) vanilla or butterscotch instant pudding
1 1/4 c milk
1 c canned pumpkin
1 tsp grated orange rind
1/4 tsp each of cinnamon, nutmeg and ginger
1 c thawed frozen whipped topping (or whipped cream)
1/4 c pecans

Directions:
Directions:
Combine pudding mix and milk, pumpkin, orange peel (rind) and spices in a bowl. Beat until blended. Then fold in whipped cream and pecans. Spoon into dessert glasses. Garnish with additional whipped cream topping and chopped pecans.
