1 c sugar
3 tbsp. quick tapioca
2 1/2 c peaches peeled, pitted and sliced
2 12 c plums, pitted and slices
1 1/4 tsp lemon juice
1/4 tsp almond extract
1 tbsp. butter
1/2 c flour
1/2 c sugar
1/4 c butter
pastry for single pie crust

Directions:
Directions:
Prepare pie crust and fit into pie plate or square pan. Mix sugar, tapioca and salt in a small bowl. Place fruit in large bowl. Add sugar mixture to fruit and toss gently. Sprinkle juice and extract over fruit. Pour mixture into pie shell. combine flour, sugar in a medium bowl. Cut in butter and stir until crumbly. Sprinkle over fruit evenly. Cook in oven at 425F for about 30 to 40 min or until pie is light brown and bubbly.
