1-2 Lbs Boston Butt
1-2 Tsp. Salt
1-2 Tsp. Pepper
1-2 Tsp. Smoked Paprika
1-2 Tsp. Garlic Powder
1 Can Black Beans
1 Can Diced Green Chilies
1 Pkg of Flour Tortillas
1 Can Enchilada Sauce
1 Avocado
Shredded Cheddar Cheese

Directions:
Directions:
Season Boston Butt with salt, pepper, smoked paprika, garlic powder and cook in crockpot for 2-4 ours or until fork tender.

Shred the Boston Butt in a large mixing bowl and black beans, green chilies, 1/3 cup of the enchilada sauce and 1/3 bag of shredded cheddar.

Add about 1/4 cup of mixture to each tortilla and roll up like a burrito. Place in shallow casserole dish and cover with remaining sauce and cheese. Bake at 350 degrees for 30 minutes or until cheese is melted and bubbly.

Serve with a couple slices of avocado on top.
