8 oz. rice noodles
1 bunch of green onions, sliced (white parts only)
2 Tbsp sesame oil
1 Tbsp minced fresh ginger root
1/3 cup peanut butter
1/4 cup soy sauce (I use a little less)
1/4 cup hot water (I use a little more)
1 Tbsp cider vinegar
1 Tsp white sugar
1/4 Tsp crushed red pepper flakes
1-2 garlic cloves
sesame seeds

Directions:

1 Cook pasta.

2 Meanwhile, combine oil, onions and garlic in a skillet. Saute over low heat until tender. Add ginger; cook and stir for 1-2 minutes.Mix in peanut butter, soy sauce, water, vinegar, sugar and red pepper flakes. Remove from heat.

3 Toss noodles with sauce and sesame seeds and serve.
