Pie Crust:
2 and 1/4 cups sifted flour
3/4 cup Crisco
1 tsp salt
3-4 tsp ice water

Pie Filling:
2 and 1/2 pounds of tart pie apples (mix two kinds) peeled and sliced
1 cup plus 2 Tbsp sugar
1/2 tsp cinnamon
1/8 tsp salt
1 and 1/2 Tbsp lemon juice
1 Tbsp butter

Directions:

Pie crust : Mix together flour and salt in a large bowl. Gently cut in Crisco Add ice water a little at a time, and mix in quickly but gently until you can form two balls of dough.
Chill for 30-60 minutes in refrigerator before rolling each ball out to to loosely fit in 9 inch pie pan. The crust tastes better if you roll it out between two layers of waxed paper with no additional flour.
Save one layer of dough for the top crust.

Filling: Combine the ingredients for the apple filling, saving the butter to dot on top of this before laying the top crust over it all. Pinch the edges of the top and bottom crust together, all around, with fingers.
Cut some vents in the top crust, sprinkle a little sugar over the crust for shine.

Place pie on a cookie sheet (in case it drips) in the center of the pre-heated oven

Bake at 425 degrees for 10 minutes, reduce heat to 350 degrees for 45 minutes.

Our friend Barbara Butterfield still makes this pie regularly, and sometimes shares one with us. I used to use her recipe and now only do that if Jack will prepare the apples. There is nothing better than a home-made apple pie with vanilla ice cream or cheddar cheese for dessert.
