Lb. Flank Steak
2 Tbsp. Soy Sauce
2 tsp. Cornstarch
Tbsp. Oil
Clove Garlic, chopped
Onion, thinly sliced
Pepper, thinly sliced
8 ozs. Baby Spinach
1/3 cup Shallot-Soy Vinaigrette

In bowl, combine Beef, Soy Sauce and Cornstarch.
Stir to coat evenly, set aside.
Heat pan over high heat till hot. Add Oil and swirling to coat the sides.
Add Garlic, cook 10 seconds
Add Beef, cook quick to what you like, ( remember it will cook a little more)
Remove from pan
Add Onion & Pepper, cook till tender & beginning to brown
Pour Shallot-Soy into pan and bring to boil.
Return Beef and add Spinach
Toss to coat with sauce.
