3 large potato
6 slices bacon, chopped and cooked
2 cups cheddar cheese, grated
4 green onions, chopped

Directions:
Directions:
1. Preheat oven to 375 agrees. Spray baking sheet lightly with cooking spray.

2. Slice potatoes 1/4 inch thick. Place in a large pot, cover with water and cook until water boils. Boil for 5 minutes. DO NOT OVER COOK, you want them firm.

3. Drain potatoes and arrange on the baking sheet, slightly overlapping. Brush lightly with vegetable oil.

4. Sprinkle with cheese, salt and pepper to taste and bacon.

5. Bake for 15 minutes until potatoes are cooked through. Place under broiler for 2 minutes. Remove from oven and top with green onions
