3 tbsp. butter or margarine
2 tsp minced onion
2 tbsp. flour
1 c light cream or evaporated milk
2 c mashed cooked carrots
2 eggs well beaten
1/2 tsp salt
1/8 tsp ground mace

Directions:
Directions:
Preheat oven to 350║F. Rub six custard cups with butter or margarine. Fill a shallow baking pan half full of hot water. Melt butter or margarine and sautÚ the onions in it for three min. Add the flour and blend well. Add cream or milk slowly, stir and simmer 5 min. Let cool. Add the carrots, mix well and add eggs, salt and mace. Pour into the custard cups and place them in the pan of hot water. Bake 25 min. Serve buttered broccoli, brussell sprouts or asparagus tips with this dish.
