1 large cauliflower
1 medium onion chopped
3 celery ribs minced
1/4 c butter
1/4 c flour
4 c chicken broth plus reserved cauliflower water
2 c scalded rich milk or cream
few grains nutmeg
salt and paprika
cheddar cheese grated

Directions:
Directions:
Steam cauliflower, drain and reserve the water. Mash cauliflower. Melt the butter and sauté the onion and celery until tender. Stir in the flour then add the chicken broth slowly and bring to the boiling point. Add the cauliflower and scalded milk with nutmeg, salt and paprika. Do not boil again. Garnish with cheddar cheese.
