2 stalks celery, strings removed & chopped
1 medium onion chopped
2 T. butter
6 - 8 medium potatoes peeled & cubed
2 carrots chopped
2 cans low sodium chicken broth
3/4 t. salt
1/2 t. dried whole thyme
1/2 t. dried rosemary crushed
2 cloves minced garlic
dash pepper & paprika
2 C. milk
1 C. shredded longhorn cheddar or Monterey jack

Directions:
Directions:
Saute butter, garlic, celery & onion in a large pot until tender
Add potatoes, carrots, chicken broth & spices, cover & simmer 30 minutes or until vegetables soft
Remove from heat and mash with a potato masher, pastry blender until pureed
Return to heat, add milk & cheese & stir until cheese is melted

Serve with salad & crusty bread
