7c. whole wheat flour
2/3c. wheat gluten
2 1/2tbsp. instant yeast
5c. warm water
2tbsp. salt
2/3c. oil
2/3c. honey
2 1/2tbsp. lemon juice
5c. whole wheat flour

Directions:
Directions:
Mix first 3 ingredients for 1 minute in bread mixer. Then add warm water and mix for 1 minute. Let rest for 10 minutes. Add salt, oil, honey, and lemon juice. Mix for 1 minute. Then add 5 more cups of flour mixing after each cup. Knead for 10 minutes. Shape into loaves and place in pan. Let rise to top of pan. Bake in 350º oven for 40minutes.
