1 eggplant
4 c fresh sliced mushrooms
2 c canned spaghetti sauce
2 c grated mozzarella cheese
5 lasagna noodles
1 medium onion diced
butter for frying
salt and pepper to taste

Directions:
Directions:
Cook lasagna noodles in salted water. Drain well and set aside. Pare and slice eggplant, salt and pepper to taste and fry in butter until tender. Set aside. Saute mushrooms and onion in butter until tender. Set aside. Layer 1 1/2 quart oven dish in the following order: noodles (note, they will have to be cut to right length to fit dish), eggplant, half of mushrooms and onions, 1 c of sauce, 3/4 c cheese, noodles, eggplant, remaining mushrooms and onion, remaining sauce, noodles and remaining cheese. Bake at 350F until heated through and cheese has browned on top.
