2 cups grated (1 block) extra sharp cheese (Cracker Barrel© preferred)
2 cups raw macaroni elbows
4 teaspoon minced onion
2 tablespoons butter
1 tablespoon flour
1/4 teaspoon dry mustard
3/4 teaspoon salt
dash of pepper (about 1/8 teaspoon)
2 cups whole milk

Optional:
4 teaspoons melted butter
3/4 cup soft bread crumbs

Directions:
Directions:
Preheat oven to 400ºF

1. Cook macaroni in large pot of boiling water according to package directions
2. Grate cheddar cheese onto waxed paper
3. Mince onion and add to double boiler with 2 inches water, bring to boil
4. add 2 tablespoons butter, when butter is melted, add flour, mustard, salt and pepper. slowly stir in milk and cook until smooth and hot, stirring often
5. Drain macaroni noodles and pour into greased casserole dish
6. Add the cheese to the sauce in the double boiler and stir until melted
7. Pour sauce over macaroni, sprinkle some cheese on top

Optional: Mix 4 teaspoons of melted butter with bread crumbs and mix to coat. spread on top of casserole prior to cooking. You can use corn flakes instead of bread crumbs, just crush them with a rolling pin first.

Bake for 20 minutes.
