1/4 cup uncooked quinoa
1/4 cup uncooked freekeh*
1 cup kale
1 cup spinach
1 avocado
1 tomato
1 apple
1/2 lemon
1 bell pepper
1/4 cheese, grated

Directions:
Directions:
1. Rinse the quinoa and freekeh
*Freekeh is a great source of protein, but may be difficult to find. The quinoa can be doubled as a substitute for freekeh. Quinoa is sold at most grocery stores in the same isle as rice.
2. Boil 12 cup of water. Add the freekeh and quinoa. Turn the heat to low. Cover. Stir occasionally. Remove from heat once the water is absorbed. Quinoa and freekeh are cooked very similar to rice. Regardless of the dry amount, cook with twice as much water as quinoa-freekeh. Allow the quinoa-freekeh mixture to cool.
3. Rinse and chop the kale, spinach, avocado, tomato, apple and bell pepper.
4. Squeeze lemon juice over the apple and avocado to prevent browning.
5. Combine all ingredients. Enjoy the fruits (and vegetables of your labor)!
