1 cup olive oil
6 Tablespoons Rice vinegar
1/4 cup sugar
1/2 tsp. pepper
2 pkgs. (3-oz. size) chicken flavored Ramen Noodles
4 cups finely chopped, cooked chicken
1/2 head medium sized cabbage, shredded (about 4 cups)
3/4 cup toasted sliced almonds
1 small onion, chopped ( about 1/3 cup)
1/4 cup toasted sesame seeds

1. In a small bowl, whisk together 1 cup olive oil, rice vinegar, sugar, pepper and contents of the
seasoning packets from the Ramen noodles. Set aside.
2. In a large saucepan, bring 6 cups of water to boil. Add the Ramen noodles and cook for about
3 minutes or till tender. Drain and transfer to a large bowl.
3. Pour 1/4 cup of oil and vinegar mixture over Ramen noodles and toss to coat.
4. Add the chicken, cabbage, sliced almonds, chopped onion and the sesame seeds to the noodle
mixture and mix well.
5, Pour the remaining oil (3/4 cup), and vinegar mixture over the salad. Toss to combine.
6. Cover and chill for 2 to 24 hours.
