Fried Pineapple Chicken Recipe

1 egg beaten
1/2 c water
2 tbsp. milk
1/3 c flour
1 1/2 tbsp. cornmeal
1 tbsp. cornstarch
1/2 tsp baking powder
4 chicken breasts
salt, pepper, garlic powder, thyme
1/2 c green or red pepper sliced
1/2 c celery chopped
1/2 c chopped onion
1 (15 oz) can pineapple chunks (reserve syrup)
1/2 c cider vinegar
1/2 c brown sugar packed
2 1/2 tbsp. soya sauce
1 1/2 tbsp. cornstarch
1/4 c water

Beat first three ingredients. Mix together next four and blend into liquid mixture until smooth. Sprinkle each chicken breast well with the four spices. Dip chicken into batter and coat well. Heat cooking oil in pan large enough for frying chicken. (Add water to thin or flour and cornstarch to thicken batter if desired.) Fry pieces until golden brown, crispy and cooked through. Remove to paper towels and keep warm. Drain all but two tbsp. fat. Add vegetables and stir fry until tender. When cooked push to one side and add pineapple syrup, vinegar, brown sugar and soya sauce. Blend cornstarch in water and stir in well. Add pineapple chunks and cashews. Bring to a boil, stirring constantly. Stir back vegetables and heat through for three more min. Place chicken on serving platter and pour sauce over it.
