2-1/2 cups milk 2tbsp butter. 1tsp salt. 1 cup cornmeal 3 large egg yolks. 1/2 cup cream or milk. 3 large egg whites 1/8 tsp cream of tartar (opt)

For added richness, substitute half-and-half for all of the milk.
Position a rake in the center of the oven. Preheat the oven to 375°F. Grease an 8X8-inch baking dish. In a large, heavy saucepan, bring to a simmer:
Milk, butter, and salt. Reduce the heat to low. Add in a slow steady stream, whisking constantly to prevent lumps: cornmeal. Increase the heat to medium and cook, stirring constantly, until the mixture is thick and shiny, 3-4 minutes. Remove from heat and set aside to cool for 3 to 4 minutes. Whisk together: 3 egg yolks, and 1/2 cup milk or cream. Stir gradually into the cornmeal mixture. Beat on medium speed until peaks are stiff but not dry the egg whites and cream of tartar. Fold into the cornmeal mixture. Spread in baking dish and bake 25-35 minutes or until golden brown and knife comes out of center clean. Serve immediately.
