1/2 cup butter
1/2 cup chopped onion
1 tsp chopped garlic
2 10 oz pkg frozen chopped spinach
1 14 oz can artichoke hearts, cut in quarters
8 oz sour cream
1/2 cup grated Parmesan cheese
1/2 cup diced water chestnuts
Salt and pepper to taste
1 can onion rings (optional)

Directions:
Directions:
Cook spinach according to directions on the package and drain well in a colander while pressing with a spoon to drain water. Sauté garlic and onion in butter. Mix all ingredients and pour into a 2 quart baking dish. Sprinkle about 3 Tbsp additional Parmesan cheese on top of casserole. Bake at 350º for 35 minutes. (Cover with foil for first 20 min) Pour onion rings on top of casserole last 5 minutes. Should be bubbly when done.

This recipe originally based on my friend Leu Wilder's book, "By Special Request." It is also a great dip with corn chips or small slices of toasted French bread. Even folks who don't own up to liking spinach or artichokes like it. Just don't tell them what's in it!
