2 cups coarsely grated scrubbed zucchini (about 1 lb.)
1 tsp. salt
4 eggs, lightly beaten
1/2 cup milk
1/2 cup bread crumbs (seasoned or plain)
1/4 cup parmesan cheese, grated
2 tbsp. butter, melted

Directions:
Directions:
Put grated zucchini in a colander, sprinkle with the salt, and let stand 1 hour. Drain, put in cloth towel and squeeze out excess moisture.

Preheat oven to 375°F. Place squeezed zucchini in a bowl and stir in the slightly beaten eggs, milk, bread crumbs, cheese, and melted butter. Pour into a 1 quart buttered baking dish. Bake for 45-60 minutes, until puffy and a knife inserted in the center comes out clean.
