15 oz. can pink salmon
Milk
1/4 c. butter
1/4 c. chopped onion
1/4 c. all purpose flour
1/2 tsp. salt
1/8 tsp. red pepper
1 Tbsp. lemon juice
1 c. dry bread crumbs

Directions:
Directions:
Drain salmon, reserve liquid; add enough milk to liquid to make one cup. Set aside. Melt butter, add onion. Cook until tender. Add flour, stir until smooth. Cook one minute. Gradually add liquid stirring constantly until thick and bubbly. Add salt and pepper. Set aside. Remove skin and bones. Flake, add lemon juice, 1/2 c. breadcrumbs and white sauce. Stir well. Refrigerate until chilled. Roll croquettes in breadcrumbs, Bake 375 º for 30 minutes. Serve with white sauce.
