3 eggs
1c. vegetable oil
3tsp. vanilla
2 1/4c. sugar
2c. shredded zucchini
3c. flour
1tsp. salt
1tsp. baking powder
1/4tsp baking soda
2tsp. cinnamon
2c. fresh blueberries

Directions:
Directions:
Beat together eggs, oil, vanilla, sugar. Fold in zucchini. Mix all dry ingredients together and add to bowl until well incorporated. Fold in blueberries. Bake at 350º for 12 minutes (mini muffins) or for 20 minutes (regular muffins).
