4-6 large potatoes
2/3c. butter
2/3c. flour
6c. milk
3/4tsp salt
1/2tsp. pepper
4 green onions, chopped
12 slices bacon cooked and crumbled (I use bacon bits)
1 1/4c. shredded cheddar cheese
8 oz. sour cream
chicken bouillon (optional)

Directions:

Wash potatoes and prick several times with a fork. Bake at 400 degrees for 1 hour until done. Let cool. Cut potatoes in half lengthwise; then scoop out pulp, and set aside. Discard skins, Melt butter in heavy saucepan over low heat; add flour-stir until smooth. Cook for 1 minute stirring constantly. Gradually add milk. Cook over medium heat stirring constantly until mixture is thickened and bubbly. Add potato pulp, salt, pepper, green onions, bacon, cheese. Cook until thoroughly heated. Stir in sour cream. Add extra milk, if necessary, for desired thickness. (optional: add chicken bouillon for extra flavoring.)
