14 Tbsp extra virgin olive oil
2 lbs ripe tomatoes, cut in half or quartered
Salt and pepper
Dry oregano
1 large red onion, thinly sliced
3 large carrots, scraped and finely chopped
4 celery stalks, finely chopped
4 large cloves garlic, peeled and finely chopped
15 sprigs Italian parsley, leaves only, finely chopped
6 large basil leaves, torn in thirds (or use dried)
I package pappardelle pasta (Italian egg noodles)

Directions:
-Preheat oven to 375 degrees. Use 2 tbls olive oil to heavily oil bottom and sides of large terra cotta or enamel casserole.
-Layer bottom with 1 pound of tomatoes. Season with salt, pepper and oregano. Dribble 2 Tbsp oil on top.
-Make subsequent layers for each vegetable, adding garlic, parsley and basil to each layer. Add Salt, pepper, oregano and 2 Tbls oil for each layer.
-Final layer is the remaining 1 pound of tomatoes. (Seasonings and oil).
-Cover with foil and bake for 1 hour, without mixing, shaking twice to ensure nothing sticks to the bottom.
- Cook pappardelle pasta and toss well in casserole.
